Ingredients
2 chicken breast
½ onion, diced
1 tbsp garlic, minced
10 ½ oz Campbell's cream of chicken soup
⅓ c mayonnaise
¼ c chicken broth
2 tsp curry powder
1 tsp salt
1 tsp pepper
1 ½ c broccoli, chopped
8 oz cheddar cheese, shredded
¼ c panko breadcrumbs
Directions
Step 1
Preheat oven to 375 degrees.
Step 2
Season chicken breast with desired spices and pan fry until cooked through. Let cool then shred.

Add a tbsp of oil to the same pan and add in onion. Sauté until translucent. Add in garlic and sauté for about 30 seconds. Remove from pan and set aside.

Whisk cream of chicken soup, sautéed veggies, mayonnaise, chicken broth, and spices together in a large bowl.

Fold in the chicken, broccoli, and cheese. Be sure to save 1/2 c of cheese for the top.

Scoop mixture into a skillet or baking dish. Sprinkle top with remaining cheese. Cover with foil and bake for 35 minutes or until bubbly.
Step 7
While Chicken Broc is baking, at 1 tsp of oil to the bread crumbs and mix until coated. Set aside.
Step 8
Remove foil and top with breadcrumbs. Continue to bake for another 10 minutes or until breadcrumbs are browned.

Serve with rice, biscuits, pasta, or mashed potatoes. Enjoy!
